I’ve been having a time getting Ben to eat vegies lately. He used to eat everything and now he definitely is getting picky. UGH! Why does that happen? Does he not like things now or is this just a control thing? Whatever it is, it’s happening. Yesterday, we went shopping at Trader Joes (my favorite store) and they were giving out samples of hummus made from white beans instead of chick peas. It was really delicious. I bought it. Today, I made Ben his egg and cheese omelet. BUT….I beat in the hummus and sprinkled in some frozen spinach. I put muenster in the middle and served as usual. Do you know that the boy ate it all up! Go me! I think I have to be more sneaky from now on. Does anyone have any recipes they would like to share? I’d love to hear about them.
Fake Mashed potatoes: Really made from Cauliflower. We have also made this without the cheddar…still good!
Fake Mashed Potatoes
2 heads of cauliflower
sour cream
butter
salt
pepper
parmesan cheese
aged cheddar cheese
cuisinart
garlic clove
In your largest, water-filled pot, plunk in the 2 heads of cauliflower, chopped into smallish florets. Toss in a hearty palmful of kosher salt, a whole clove of garlic, then bring to the boil.
While waiting for your cauli to boil, grate your brick of aged cheddar cheese. Now, when I say “aged”, I don’t mean the 15 minutes it takes you to lug your groceries from the car to the fridge. Like, aged. Properly. A year would be ideal.
Puree your drained cauliflower (without the garlic) in your cuisinart along with a heaping handful of the grated cheese, a knob of butter, a few shakes or shreds of any parmesan, a tablespoon or so of sour cream and some salt and pepper.
After pureed–either to an insanely smooth, baby-food texture, or a lumpier, chunkier concoction–pour back in your huge pot and let thicken on a very low heat for a few minutes, or just to keep warm until you serve

Funny story. Katy came over with the new baby, I tried to take a pic and could not find out point and shoot, so I went up to the attic and whipped out my SLR from college…It felt so great having my camera in my hands again, I have not used it since we bought the house. Katy & Dave loved the pics that DAve said I should look into getting a digital model, so I researched and liked the D80. My Taste of Home parties bought me the camera. And I love having it again. I can not believe how much I forgot, so I am thinking about taking a photography class and trying to convince Dave to take it with me…sort of Like Date night. He also studied Photography. I used to have my own dark room when I lived back home…I would spend hours in there smelling up the basement with all my chemicals! Digital is soooo way easier! I completely do not have the “eye” anymore…though!
